David Verolin – Food and Beverage Manager

Food and beverage manager Dave Verolin

David, a native of Windsor and a graduate of the University of Windsor, has over twenty years experience in the Food and Beverage industry.

He began his career at Essex Golf and Country Club. Employed here for twelve years, he became proficient in all aspects of service in a private Club. In a management position at Chatham Street Grill, for the next five years, he further developed his skills in a casual fine dining setting. For the past six years David has been employed by Kelsey’s Restaurants Inc. With a strong work ethic and a keen attention to detail, David was chosen from many qualified applicants to launch Kelsey's newest location in Tecumseh.

David looks forward to bringing his experience to the Windsor Club to further enhance member service.

Executive Chef Steven Lay

Young, experienced, successful, and passionate about producing the highest quality product possible: that’s the Windsor Club Executive Chef Steven Lay.

Although only 31 years of age, he brings an amazing 19 years of food and hospitality experience to your table, including work with million-dollar, upscale establishments. He started young, he explains. His uncle, a chef, owned a catering business in Ottawa serving many Parliament Hill and government-related functions, and Steven began working with him at 12 years of age. Two of his brothers were also involved, and all became chefs.

His extensive Executive/Sous Chef experience includes six seasons with Moraine Lake Lodge, Lake Louise, and five seasons with Sunshine Village Ski and Snowboard Resort in Banff. At both, he was lauded for his leadership, work ethic, management skills and as an exceptional chef, who created "an outstanding di ning room experience that helped bring guests back year after year." In 2003, family illness brought Steven and his wife, Andrea MacPhee (originally from Windsor), back to Ontario.

David Grascoeur, a Brittany (France) native, trained in some of the best hotels and restaurants, George Blanc three star Michelin guide and Le Domaine d’auriac in France. David moved to Canada about ten years ago to work at the prestigious Inn at Manitou in the Muskoka region. He then worked in Toronto’s fine dining scene for a few years, including Sous Chef at Starfish oyster bed and grill and then went on to California Dream in Montreal.

Now in Windsor, he has worked as executive chef at Le Steak at Fillmore East, a fine dining French restaurant with wonderful reviews. He also worked at Caesars Windsor and the Windsor yacht Club.

David is excited and honored to be a part of the "Windsor Club" family.
